Ingredients
Scale
- 2 chicken breasts, diced
- 1 cup pineapple chunks
- 1 tablespoon olive oil
- 1 teaspoon taco seasoning
- Salt and pepper to taste
- 8 small corn tortillas
- 1/2 cup red onion, diced
- 1/2 cup cilantro, chopped
- Lime wedges for serving
Instructions
- Heat the olive oil in a skillet over medium heat until it shimmers.
- Add the diced chicken to the skillet and cook until browned and cooked through, about 6-8 minutes.
- Stir in the taco seasoning, pineapple chunks, salt, and pepper, cooking for an additional 2-3 minutes.
- Warm the corn tortillas in another skillet or microwave until pliable.
- Assemble the tacos by placing the chicken and pineapple mixture onto each tortilla.
- Top each taco with diced red onion and chopped cilantro.
- Serve with lime wedges on the side.
Notes
Use frozen pineapple if necessary, just thaw and drain it beforehand. For a smoky flavor, consider grilling the chicken instead of sautéing it. Add jalapeños for a spicy kick.
