Instructions

  1. Heat the olive oil in a skillet over medium heat until it shimmers.
  2. Add the diced chicken to the skillet and cook until browned and cooked through, about 6-8 minutes.
  3. Stir in the taco seasoning, pineapple chunks, salt, and pepper, cooking for an additional 2-3 minutes.
  4. Warm the corn tortillas in another skillet or microwave until pliable.
  5. Assemble the tacos by placing the chicken and pineapple mixture onto each tortilla.
  6. Top each taco with diced red onion and chopped cilantro.

Notes
