- 2 small pumpkins
- 1 cup pizza sauce
- 2 cups shredded mozzarella cheese
- 1 cup diced pepperoni
- 1/2 cup chopped bell peppers
- 1/2 cup sliced olives
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C). Cut the tops off the pumpkins and scoop out the seeds.
- In a large bowl, combine pizza sauce, mozzarella cheese, diced pepperoni, chopped bell peppers, sliced olives, Italian seasoning, salt, and pepper. Mix well.
- Fill each pumpkin with the pizza mixture, ensuring they are packed.
- Drizzle olive oil over the tops, place in a baking dish, cover with foil, and bake for 30-40 minutes until tender. Remove foil and bake for an additional 10 minutes for a golden finish.
- Let the pumpkins cool for a few minutes before serving.
Notes
For a meat-free version, substitute the pepperoni with vegetables. Serve warm with a garden salad or garlic bread.
