Description

Delightful blend of flaky, buttery pastry and savory ham and cheese, perfect for breakfast or snacks.


Ingredients

  • 2 cups sourdough starter
  • 2 cups all-purpose flour
  • 1/4 cup unsalted butter, softened
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 pound thinly sliced ham
  • 1 cup shredded cheese (e.g., gruyere or cheddar)
  • 1 egg (for egg wash)

Instructions

  1. In a mixing bowl, combine the sourdough starter, all-purpose flour, softened butter, milk, salt, and sugar. Mix the ingredients until they come together and form a soft dough.
  2. Knead the dough on a lightly floured surface until it’s smooth, about 5-10 minutes.
  3. Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place until doubled in size, about 1 to 2 hours.
  4. After the dough has risen, roll it out into a large rectangle on a floured surface. Cut the dough into triangles, approximately 4 to 6 inches wide at the base.
  5. Place a slice of ham and a sprinkle of cheese on each triangle.
  6. Starting from the wide end, roll up each triangle towards the point to form a croissant shape.
  7. Arrange the rolled croissants on a baking sheet lined with parchment paper. Cover them lightly with a cloth and let them rise for another 30 minutes.
  8. Preheat the oven to 375°F (190°C). Brush each croissant with beaten egg and bake for 20-25 minutes.

Notes

Store croissants in an airtight container at room temperature for up to 2 days or freeze for a month.
