Description

Crispy taquitos filled with spicy buffalo chicken and cheese, perfect for game day or a flavorful snack.


Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup chopped green onions
  • 810 small flour or corn tortillas
  • Oil for frying or baking
  • Sour cream and additional buffalo sauce for serving

Instructions

  1. Preheat the oven to 400°F (200°C) or heat oil in a frying pan for frying your taquitos.
  2. Combine the cooked shredded chicken, buffalo sauce, shredded cheese, and chopped green onions in a large bowl. Stir until well mixed.
  3. Take a tortilla and place approximately 2-3 tablespoons of the chicken mixture in the center. Roll it tightly, tucking in the sides as you go.
  4. Place the rolled taquitos seam-side down on a baking sheet and lightly brush the tops with oil if baking. Bake for 20-25 minutes or until golden brown and crispy. For frying, place them in hot oil and fry until golden.
  5. Serve the taquitos hot with sour cream and additional buffalo sauce for dipping.

Notes

Use rotisserie chicken for a quicker option. You can make these ahead of time and refrigerate them uncooked for up to 24 hours.
