- 2 cups cooked shredded chicken
- 1/2 cup buffalo sauce
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup chopped green onions
- 8–10 small flour or corn tortillas
- Oil for frying or baking
- Sour cream and additional buffalo sauce for serving
Instructions
- Preheat the oven to 400°F (200°C) or heat oil in a frying pan for frying your taquitos.
- Combine the cooked shredded chicken, buffalo sauce, shredded cheese, and chopped green onions in a large bowl. Stir until well mixed.
- Take a tortilla and place approximately 2-3 tablespoons of the chicken mixture in the center. Roll it tightly, tucking in the sides as you go.
- Place the rolled taquitos seam-side down on a baking sheet and lightly brush the tops with oil if baking. Bake for 20-25 minutes or until golden brown and crispy. For frying, place them in hot oil and fry until golden.
- Serve the taquitos hot with sour cream and additional buffalo sauce for dipping.
Notes
Use rotisserie chicken for a quicker option. You can make these ahead of time and refrigerate them uncooked for up to 24 hours.
